Barley Beef Skillet

This one pot meal is great for a winter meal! Ground beef is cooked with onion and garlic. Beef broth and tomato sauce is added in next. Then chopped carrots, tomatoes, zucchini, barley and seasonings are added in. After stirring everything together, the pot is covered and all the ingredients cook over a low flame. Using barley in this dish helps fill you up and is an alternative to rice or pasta.

Ingredients

  • 1 lb lean ground beef
  • ¼ cup chopped onion
  • 1 garlic clove minced
  • 1 can (14 ½ oz) reduced-sodium beef broth
  • 1 can (8 oz) tomato sauce
  • 1 cup water
  • 2 small carrots chopped
  • 1 small tomato seeded and chopped
  • 1 small zucchini chopped
  • 1 cup medium pearl barley
  • 2 tsp Italian seasoning
  • ¼ tsp salt
  • tsp pepper

Instructions

  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add the garlic; cook 1 minute longer. Drain. Add broth, tomato sauce and water; bring to boil. Stir in remaining ingredients. Reduce heat; cover and simmer 45 to 50 minutes or until barley is tender.
