No Bake Strawberry Jello Lasagna

I stole this recipe for No Bake Strawberry Jello Lasagna from Vera from Omgchocolatedesserts.com. This yummy sweet layered dessert starts with crushed golden Oreos. A strawberry cheesecake layer comes next and is made with cream cheese, butter, powdered sugar, whipped cream and diced fresh strawberries. Strawberry Jello, strawberry Greek yogurt and more whipped cream make up the next layer. Additional whipped cream is the top layer. This sweet lasagna refrigerates several hours until set and ready to serve.

To start the crust, crush 36 Golden Oreo cookies (14.3 oz tray) in a food processor.

Stir together crushed cookies with ½ cup melted butter. Press into bottom of a 9×13 pan. Set in freezer to firm while making next layer.

Start the cheesecake layer by creaming together ½ cup softened butter, 8 oz cream cheese and 1 cup powdered sugar until smooth and creamy. Add 1 ¼ cup whipped cream and mix to combine.

Using a rubber spatula gently fold in 1 ⅓ cup diced fresh strawberries.

Spread mixture over chilled crust. Place in fridge.

Next make the strawberry jello layer. In a large bowl place 3 oz strawberry flavored jello, add ½ cup boiling water and stir to dissolve. Whisk in 1 cup strawberry Greek yogurt until combined.

Add 4 cups whipped cream and mix until combined.

Pour over cheesecake layer and smooth on top. Refrigerate 2 to 3 hours or until set. Add 2 cups whipped cream on top.

Gently spread the whipped cream to cover the entire jello layer.

Refrigerate 2 hours or overnight.

Ingredients

Crust:

  • 36 Golden Oreo cookies 14.3 oz tray
  • ½ cup melted butter

Strawberry Cheesecake Layer:

  • 8 oz cream cheese softened
  • ½ cup butter softened
  • 1 cup powdered sugar
  • 1 ¼ cup whipped cream
  • 1 ⅓ cup diced fresh strawberries about 5.5 oz

Strawberry Jello Layer:

  • 3 oz strawberry flavored gelatin Jello
  • ½ cup boiling water
  • 1 cup strawberry Greek yogurt
  • 4 cups whipped cream

Topping:

  • 2 - 3 cups whipped cream
  • 4 - 5 oz white chocolate bar to make curls

Instructions

Crust:

  1. Crush the oreos in a food processor; stir together ½ cup melted butter. Press into bottom of a 9x13 pan. Set in freezer to firm while making next layer.

Cheesecake Layer:

  1. Cream together ½ cup softened butter, 8 oz cream cheese and 1 cup powdered sugar until smooth and creamy. Add 1 ¼ cup whipped cream and mix to combine. Using a rubber spatula gently fold in diced strawberries and spread over chilled crust. Place in fridge.

Jello Layer:

  1. In a large bowl place jello, add ½ cup boiling water and stir to dissolve. Whisk in 1 cup strawberry Greek yogurt until combined. Add 4 cups whipped cream and mix until combined. Pour over cheesecake layer and smooth on top.
  2. Refrigerate 2 to 3 hours or until set.
  3. Spread 2 cups whipped cream on top.
  4. To make curls use a vegetable peeler across room temperature white chocolate. Sprinkle on top. Refrigerate 2 hours or overnight.
  5. Store in refrigerator.

Recipe Notes

I use Cool Whip for the whipped cream, you need about 22 oz. Since I forgot to buy a white chocolate bar while I was shopping, I used grated white chocolate chips instead.
