Hash brown potatoes are mixed with eggs and cheese and seasoning. The mixture is poured into a waffle iron and out comes Egg & Cheese Hash Brown Waffles. A creative way to serve eggs and hash browns together in one dish for breakfast.

20ozpackage refrigerator hash brown potatoes
3large eggs
¼cupmilk
1cupshredded cheddar cheese
¼cupchives
Salt
Pepper
Instructions
Preheat waffle maker to med-high heat. Lightly oil the top and bottom of the waffle maker or coat with non-stick spray.
Whisk eggs and milk together in a bowl. Stir in potatoes, cheese, chives and ½ tsp salt and ¼ tsp pepper.
For a round waffle maker, use 1 cup of mixture, spreading to ½ inch from edge of waffle maker.
Cook 5 minutes, until golden brown and crisp.
Keep warm in oven.
Recipe Notes
You can use a bag of frozen hash brown potatoes, as long as they are thawed. They can be thawed overnight in the refrigerator or defrost in the microwave. Green onions or another type of onions can be substituted for the chives called for in the recipe. If using onions, besides green onions, sauté them until soft prior to mixing in the recipe. The waffles do not cook long enough to cook the onions.
