Onion Roasted Potatoes

Easy 3 ingredient side dish. Can be made with a variety of potatoes and a variety of dried soup mixes. Easy and flavorful potato dish.

Ingredients

  • 1 envelope Lipton Recipe Secrets dried Onion soup mix
  • 4 medium potatoes cut into large cuts (~ 2 lbs)
  • cup olive oil

Instructions

  1. Preheat oven to 425 F. Combine all ingredients in 13 x 9 pan.
  2. Bake stirring occasionally, until tender and golden brown, approximately 35 minutes.

Recipe Notes

I use 2 pounds Yukon gold potatoes instead of the russet potatoes shown on the recipe picture. Yukon golden are a pretty yellow color and when roasted become sweeter. I leave the skins on the potatoes; just make sure to scrub the potatoes before cutting. I have used dried vegetable soup instead of dried onion soup, just make sure to pick out the dried peas first; the dried peas will turn into little rocks when roasting (I learned that the hard way). Since there are 2 packets of soup in a box sometimes you have an extra packet leftover from when you bought a box for a different recipe. Save yourself a trip to the grocery store and use whatever leftover dried soup you have in the pantry.
