I stole this recipe for Circus Animal Cookie Blondies from thecountrycook.net. These dessert bars are a delicious treat and are easy to make. Butter and sugar are creamed together until light and fluffy. Then eggs are added in with vanilla. Next flour, cornstarch, salt and baking soda are mixed in a separate bowl. The dry ingredients are added to the wet ingredients. Chopped animal crackers and rainbow nonpareils are folded into the mix. Then the dough is pressed into a baking pan. The blondies are cooked until golden. Frosted animal crackers are main ingredient for these blondies, but you can use any animal crackers you prefer.
The ingredients for this recipe are: 1 cup butter, 3 cups granulated sugar, 4 large eggs, 4 tsp vanilla extract, 5 ⅓ cups flour, 2 tbsp cornstarch, 2 tsp baking soda, 2 tsp salt, 4 cups chopped circus animal cookies and 4 tbsp rainbow nonpareils
Chop the animal crackers and set aside.
In a medium bowl, whisk together the flour, cornstarch, salt and baking soda.
Using an electric mixer cream together the butter and sugar until light and fluffy. Then add the eggs in one at a time, mixing well in between. Add in the vanilla and mix again.
Slowly add the dry ingredients into the wet ingredients and mix until combined.
Then add in the nonpareils into the dough and mix.
Then fold in the chopped animal crackers.
Gently press the dough into the prepared baking pan. Bake at 350 F for 25 to 30 minutes or until the cake tester comes out clean.
Once cool cut into square and drizzle with candy melts if desired.
