Nutella Banana Muffins

I stole this recipe for Nutella Banana Muffins from togetherasfamily.com. These delicious muffins can be served as breakfast, brunch or a snack. Flour, baking soda, baking powder and salt are mixed together. Then mashed bananas are mixed with butter, brown sugar, granulated sugar, eggs and vanilla. Next the flour mixture is added to the banana mixture. Batter is added to muffin tins, then one teaspoon of warmed Nutella is added to the top. Then a toothpick is used to swirl the Nutella into the muffin batter. The muffins are baked until golden. This recipe is delicious way to use bananas, even imported ones.

The ingredients for this recipe are: 2 cups AP flour, 1 tsp baking soda, ½ tsp baking powder, ½ tsp salt, 6 medium bananas, ½ cup butter, ½ cup packed brown sugar, ¼ cup granulated sugar, 2 large eggs, 1 tsp vanilla extract and ⅓ cup Nutella

In a small mixing bowl, whisk together flour, baking soda, baking powder and salt. Set aside.

Then in another bowl add mashed bananas, melted butter, brown sugar, sugar, eggs and vanilla extract.

Beat on medium speed for 3 minutes. Next add in the dry ingredients and mix on low speed until just combined and no flour streaks or pockets remain.

At this point I add in chopped pecans.

Place 18 muffin liners into muffin tins or spray with non-stick cooking spray. Fill each muffin tin ¾ of the way full with batter.

Place the Nutella into a microwave safe bowl and warm for 30 seconds or until it’s thinned. Then spoon a about 1 tsp of the warmed Nutella on top of each muffin tin.

Use a toothpick or knife to swirl the Nutella into the muffin.

Bake for 15 to 18 minutes or until a toothpick inserted into the center of the muffins come out clean. Allow the muffins to cool in the pan for 15 minutes. Remove them to a cooling rack to cool completely.
