Zucchini Fries

I stole this recipe for Zucchini Fries from wellplated.com. This delicious recipe can be a side dish, appetizer or snack. Zucchini is sliced into sticks and patted dry. The zucchini pieces are dipped in eggs then coated with a mixture of panko, flour, Parmesan cheese, salt, onion powder and pepper. Next the coated zucchini are placed on a baking sheet. Once all the zucchini are placed on baking sheets and coated with cooking spray and baked until golden and tender inside. These delicious zucchini fries are tasty way to get kids to eat vegetables.

The ingredients for this recipe are: 3 medium zucchini, ½ cup panko breadcrumbs, ⅓ cup flour, ¼ cup finely grated Parmesan cheese, ½ tsp salt, ¼ tsp onion powder, ¼ tsp black pepper and 2 large eggs

Cut the zucchini into ½ inch by 3 ½ inch sticks.

In a wide shallow dish (like a pie plate) combine the panko, flour, Parmesan cheese, salt, onion powder and pepper.

Then in a separate bowl briskly whisk the eggs until lightly foamy. Working five or six zucchini fries at a time, place the zucchini in the bowl with the egg, tossing to coat evenly.

Shake off any excess egg, then add them to the bowl with the Panko. Coat with Panko mixture, pressing lightly so that it adheres.

Arrange the zucchini on the baking sheet. Line up the sticks so they are near each other and all fit, but make sure they do not touch. Repeat with remaining zucchini.

Lightly, but thoroughly, coat the exposed sides of the zucchini with the cooking spray. Bake for 10 minutes, then remove from the oven and lightly coat with baking spray a second time. Return to the oven, then continue baking for 10 additional minutes. Bake until the crumbs are crisp and golden and the insides are tender.

Serve the zucchini fries immediately.

  1. Position racks in the center of the oven and preheat the oven to 425 F. Coat a large rimmed baking sheet with nonstick spray.
  2. Spread the sliced zucchini onto paper towels. Lightly pat dry. Let rest on the towel while preparing other ingredients.
  3. In a wide shallow dish (like a pie plate) combine the panko, flour, Parmesan cheese, salt, onion powder and pepper.
