I stole this recipe for Strawberry Cobbler from insanelygoodrecipes.com. This dessert is a delicious way to enjoy fresh strawberries. First strawberries are diced and placed in a bowl with sugar, cornstarch and lemon juice. Then the strawberry mixture is poured into a baking dish and topped with diced butter. Next flour, baking powder, cornstarch, sugar and salt are mixed together in a bowl with butter and milk. The dough mixture is dropped over the strawberries. Then the cobbler is baked in the oven until the top is golden brown.

The ingredients for this recipe are: ½ cup granulated sugar, 2 tbsp cornstarch, ½ cup lemon juice, 3 cups strawberries, 2 tbsp butter, 1 cup AP flour, 1 tbsp granulated sugar, 1 ½ tsp baking powder, ½ tsp salt, 3 tbsp butter and ½ cup milk
Place the strawberries into a large bowl. Then add in the sugar, cornstarch and lemon juice. Mix well until the strawberries are thoroughly coated.
Pour the strawberry mixture into a butter 2-quart baking dish. Top with 2 tablespoons of butter.
Combine the flour, baking powder, cornstarch, sugar and salt in a bowl. Stir in 3 tablespoons of butter.
Next add the milk. Mix until a soft dough forms.
Spoon the mixture over the berries.
Bake at 375 F for 35 to 40 minutes in the preheated oven, or until the top is golden brown.
Scoop out and serve!
Serve as is or with a scoop of ice cream.
