I stole this recipe for Pimento Cheese Buttermilk Biscuits from plainchicken.com who stole it from Buzz Café in Orange Beach, AL. These homemade biscuits have pimento cheese spread as a secret ingredient. First biscuit dough is made with flour, sugar, baking powder. Then the dry ingredients are mixed with butter, eggs and buttermilk. Once the dough is mixed then pimento cheese is spread on top. Next the dough is folded over on itself to mix the cheese spread into the dough. The dough is cut into biscuits and baked until golden. You’ll love the smell of these biscuits baking.
The ingredients for this recipe are: 3 cups AP flour, 2 tbsp sugar, 2 tbsp baking powder, 2 tsp salt, 1 cup cold butter, 3 eggs, 1 ¾ cup whole buttermilk and 12 oz container pimento cheese
Preheat oven to 425 F. Line baking sheet with parchment paper. Then in a large mixing bowl combine flour, sugar, baking powder and salt.
Then grate butter with box grater. Add to flour mixture. Toss gently with hands.
Whisk together eggs and buttermilk. Make a well in the center of the flour mixture. Next pour the buttermilk mixture into well. Gently mix with hands 15-20 seconds. Do not over mix. Dough will be wet.
Then place dough on floured surface and flatten into rectangle.
Next place the pimento cheese on top of the dough.
At this time fold the dough over on top of itself 5 or 6 times, until dough has come together. Add more flour if sticking.
Pat dough to ¾ inch thickness and cut into biscuits. Then place the biscuits on baking sheet.
Bake for 15 minutes, until starting to turn golden brown. Brush with melted butter, if desired.
Serve warm.

Recipe Notes
Can prep dough up to baking step and freeze. Bake frozen biscuits adding a few minutes to cook time, don’t need to thaw.
