Crispy Parmesan Garlic Edamame

I stole this recipe for Crispy Parmesan Garlic Edamame from homemadehooplah.com who stole it from Pumps & Iron. This delicious vegetable recipe is a perfect side dish or snack. Parmesan cheese, garlic powder, salt and pepper are mixed together in a bowl. Then in another bowl shelled edamame are tossed with olive oil. Next the Parmesan cheese mixture is sprinkled top and stirred in. The coated edamame is spread onto a lined baking sheet and baked until the cheese is melted and browned. This recipe is a delicious way to serve a nutritious and healthy vegetable, even for picky eaters.

The ingredients for this recipe are: 2 cups edamame raw, 1 tbsp olive oil, ¼ cup Parmesan cheese, ¼ tsp garlic powder, 1 pinch salt and 1 pinch black pepper

Shell the edamame. If using frozen, thaw and then drain.

In a bowl place the edamame and the olive oil and toss to coat. Then in a medium bowl, add Parmesan cheese, garlic powder, salt and pepper. Pour the Parmesan cheese mixture on top.

Toss gently to coat. Next spread the edamame onto a parchment-lined baking sheet in an even layer.

Bake in a 400 F oven for 12-15 minutes or until the cheese in melted and browned.

Let cool for 5 minutes before serving. I serve this recipe as a side dish with Asian Sticky Slow Cooker Ribs.
