Hot Chocolate Cookies

These easy to make cookies get their flavor from powdered hot cocoa mix. Butter and sugar are beaten with eggs and vanilla. Then flour, hot cocoa mix, salt, baking soda and baking powder are mixed into the dough. Next, chocolate chips are folded into the dough before refrigerating for 30 min. Mallow bits are added to the dough before shaping and baking. These delicious cookies taste just like hot chocolate, perfect for a cold winter day.

Ingredients

  • 1 cup butter softened
  • 1 cup sugar
  • cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 ¼ cups flour
  • 4 packages (¾ cup) hot cocoa mix (NOT SUGAR FREE)
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup Mallow Bits no mini marshmallows

Instructions

  1. Beat butter and sugars in a large bowl until light and fluffy. Add eggs and vanilla; mix well.
  2. In a separate bowl combine dry ingredients. Gradually beat dry ingredients into butter mixture until blended. Stir in chocolate chips. Cover and chill for 30 minutes.
  3. When ready to bake, preheat oven to 350 F.
  4. Fold in mallow bits into chilled dough. Drop 2 tbsp dough, 2 inches apart, onto baking sheets lined with baking mats or parchment paper. Bake 9 to 11 minutes or until edges are lightly browned. Cool on baking sheets 5 minutes, remove to wire racks and cool.
