I stole this recipe for Oven-Roasted Corn on the Cob from southernliving.com. This is an easy to make vegetable recipe. Butter, parsley, garlic, rosemary, thyme, salt and pepper are mixed together in a bowl. An ear of corn is placed on a piece of foil, and then rubbed with the butter mixture. The foil packet is closed and placed on a baking sheet. Next the corn is baked in the oven and then ready to enjoy. This recipe is great for summer fresh corn or can be made with frozen corn ears during the rest of the year.

Preheat oven to 425 F. Place 4 ears fresh corn into individual pieces of foil.
Then in a small bowl add ¼ cup unsalted butter, 1 tbsp chopped fresh parsley, 2 minced garlic cloves, 1 tsp chopped fresh rosemary, 1 tsp chopped fresh thyme, ¾ tsp salt and ½ tsp black pepper.
Mix the ingredients together.
Then rub 1 tbsp of the butter mixture on each corn cob.
Close foil around each corn cob, place packets on a baking sheet.
Bake until corn is soft, 20-25 minutes, turning once halfway through cook time. Remove corn from foil and serve.
