Oven-Roasted Corn on the Cob

This is an easy to make vegetable recipe. Butter, parsley, garlic, rosemary, thyme, salt and pepper are mixed together in a bowl. An ear of corn is placed on a piece of foil, and then rubbed with the butter mixture. The foil packet is closed and placed on a baking sheet. Next the corn is baked in the oven and then ready to enjoy. This recipe is great for summer fresh corn or can be made with frozen corn ears during the rest of the year.

Ingredients

  • ¼ cup unsalted butter softened
  • 1 tbsp fresh parsley chopped
  • 2 garlic cloves minced (2 tsp)
  • 1 tsp chopped fresh rosemary
  • 1 tsp chopped fresh thyme
  • ¾ tsp salt
  • ½ tsp black pepper
  • 4 ears fresh corn husks removed

Instructions

  1. Preheat oven to 425 F. Stir together butter, parsley, garlic, rosemary, thyme, salt and pepper in a bowl.
  2. Place corn in individual pieces of foil. Rub 1 tbsp butter on each corn cob. Close foil, place packets on a baking sheet.
  3. Bake until corn is soft, 20-25 minutes, turning once halfway through cook time. Remove corn from foil and serve.
