Homemade Funfetti Cake

I stole this recipe for Homemade Funfetti Cake from sallysbakingaddiction.com. This pretty cake is easy to make. Dry ingredients are flour, baking powder, baking soda and salt. The wet ingredients include butter, sugar, egg, yogurt, milk and vanilla. After beating together the wet ingredients, the dry ingredients are mixed in and then sprinkles are folded in before baking. Homemade vanilla butter cream frosting is made after the cake cools. More sprinkles finish the frosted cake. Nothing beats a homemade cake!

For the cake you will need: 1 ⅔ cup AP flour, ½ tsp baking powder, ¼ tsp baking soda, ½ tsp salt, ½ cup unsalted butter, ¾ cup granulated sugar, ¼ cup light brown sugar, 1 large egg, ¼ cup yogurt, ¾ cup milk, 1 tbsp vanilla extract and ⅔ cup sprinkles.

In a large microwave safe bowl, melt butter in microwave. Then whisk in the sugars vigorously getting out any brown sugar lumps into the butter – mixture will be gritty. Next whisk in egg, yogurt, milk and vanilla until combined.

In a medium bowl, mix together flour, baking powder, baking soda and salt. Then slowly mix the dry ingredients into the wet until no lumps remain.

Next slowly stir in sprinkles, but do not over mix because the sprinkles will bleed their colors.

Preheat oven to 350 F. Spray 9 inch spring form or baking pan generously with nonstick spray. Spoon the batter into prepared pan. Bake the cake for 33-37 minutes total.

While the cake cools, make the frosting. Beat 1 cup softened butter on medium speed with electric mixer. Beat for 3 minutes until smooth and creamy. Then add 3 to 4 cups powdered sugar, ¼ cup heavy cream and 2 ½ tsp vanilla with the mixer running.

Increase to high speed and beat for 3 minutes. Add more powdered sugar if frosting is too thin or more cream if mixture is too thick. Then start frosting the cake. (I doubled the recipe to make a 2 layer cake.)

Don’t forget to top with sprinkles.

  • ½ cup unsalted butter melted
  • ¾ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 large egg
  • ¼ cup yogurt plain or vanilla
  • ¾ cup milk
  • 1 tbsp vanilla extract
  • cup sprinkles

Vanilla Buttercream

  • 1 cup unsalted butter softened to room temperature
  • 3 to 4 cups powdered sugar
  • ¼ cup heavy cream
  • 2 ½ tsp vanilla extract
  • Salt to taste

Instructions

  1. Preheat oven to 350 F. Spray 9 inch spring form or baking pan generously with nonstick spray. Set aside.
  2. In a medium bowl, mix together flour, baking powder, baking soda and salt. Set aside. In a large microwave safe bowl, melt butter in microwave. Whisk in the sugars vigorously getting out any brown sugar lumps into the butter – mixture will be gritty. Whisk in egg, yogurt, milk and vanilla until combined.
  3. Slowly mix in dry ingredients until no lumps remain. Batter will be thick. Slowly stir in sprinkles, but do not over mix because the sprinkles will bleed their colors.
  4. Spoon the batter into prepared pan. Bake the cake for 33-37 minutes total. (Bake for 20 minutes, and then cover loosely with foil and continue baking for 13-17 minutes or until a toothpick inserted in the center comes out clean.) Allow to cool.
  5. To make the frosting: beat softened butter on medium speed with electric mixer. Beat for 3 minutes until smooth and creamy. Add powdered sugar, cream and vanilla with the mixer running. Increase to high speed and beat for 3 minutes. Add more powdered sugar if frosting is too thin or more cream if mixture is too thick. Add ¼ tsp of salt if frosting is too sweet. Frost the cooled cake as desired and top with sprinkles.
