I stole this recipe for Spinach Artichoke Bread from lilluna.com. This tasty appetizer is basically spinach artichoke dip spread on some bread. The bread filling starts with mixing sour cream, mayo, cream cheese, parmesan cheese and minced garlic until smooth. Then artichoke hearts and spinach are mixed in next. A loaf of bread is sliced open lengthwise and the spinach artichoke mixture is spread on top. The bread halves are baked and then sliced and served warm. For this recipe you will need: ½ cup sour cream, ½ cup mayonnaise, 8 oz cream cheese, 1 cup Parmesan cheese, 1 tsp minced garlic, 1 cup frozen spinach (thawed), 8 oz artichoke hearts, 1 cup mozzarella cheese and 1 French bread loaf.
Preheat oven to 350 F. In a medium bowl, mix the sour cream, mayo, cream cheese, Parmesan cheese and garlic until smooth.
Make sure the spinach is completely drained after thawing. Then stir in chopped artichoke hearts and the spinach.
Next slice the bread in half lengthwise. Place bread, cut sides up onto a baking sheet lined with parchment paper. Spoon the spinach mixture to the top of the bread.
Spread the spinach mixture evenly over the bread slices. Then top with mozzarella cheese.
Bake for 10 minutes, broiling for 1 minute.
Slice and serve warm.
