Chocolate Mint Brownies

I stole this recipe for Chocolate Mint Brownies from bettycrocker.com. These layered brownies get help from the store by starting with boxed brownie mix. The brownie layer is cooked and cooled. A mint layer is made with powdered sugar, cream cheese, mint extract and green food color. Chocolate topping for the final layer is made with whipping cream and chocolate chips. Chocolate Mint Brownies are actually easy to make, the longest part is waiting for one layer to cool and set before starting the next layer. These brownies are great to make for any reason, even to help someone not be mad at you.

Preheat oven 350 F (325 F for dark or nonstick pan). Grease bottom of 9 inch square pan. Make and bake 1 box Betty Crocker Original Supreme Premium brownie mix as directed on box. Cool completely, about 1 ½ hours. (I doubled the recipe so all of my pictures show a doubled amount.)

In a large bowl mix 2 ½ cup powdered sugar, 3 tbsp softened butter, 3 tbsp whipping cream, 2 oz softened cream cheese, ⅛ to ¼ tsp mint extract and 2 drops green food color.

Beat with an electric mixer on medium until smooth.

Spread over cooled brownies. Refrigerate 1 hour or until set.

In a 2 qt. nonstick saucepan, add ⅓ cup whipping cream, 1 ⅓ cup semisweet chocolate chips and ⅓ cup butter.

Heat over medium-low stirring constantly, until melted and smooth.

Cool 10 minutes or until lukewarm. Pour topping over mint layer.

Spread chocolate topping to completely cover the mint layer.

Take a second to love the layers.

Refrigerate uncovered about 2 hours or until set. Before cutting into bars, let stand 10 minutes at room temperature. Cut 6 x 4.

Be careful when removing from the pan, the layers don’t cut very clean.

  • 1 box (1 lb 2.4 oz) Betty Crocker Original Supreme Premium Brownie Mix
  • Water / oil / egg – called for on box

Filling

  • 2 ½ cup powdered sugar
  • 3 tbsp butter softened
  • 3 tbsp whipping cream
  • 2 oz cream cheese softened
  • ⅛ to ¼ tsp mint extract
  • 2 drops green food color

Topping

  • cup whipping cream
  • 1 ⅓ cup 8 oz semisweet chocolate chips
  • cup butter

Instructions

  1. Preheat oven 350 F (325 F for dark or nonstick pan). Grease bottom of 9 inch square pan. Make and bake brownie mix as directed on box. Cool completely, about 1 ½ hours.
  2. In a large bowl beat filling ingredients with electric mixer on medium until smooth. Spread over cooled brownies. Refrigerate 1 hour or until set.
  3. In a 2 qt. nonstick saucepan, heat topping ingredients over medium-low stirring constantly, until melted and smooth. Cool 10 minutes or until lukewarm.
  4. Pour topping over filling; spread to cover. Refrigerate uncovered about 2 hours or until set. Before cutting into bars, let stand 10 minutes at room temperature. Cut 5 x 4. Store covered in refrigerator.

Recipe Notes

I double the recipe to make a 9x13 pan. Bake the brownies according to box instructions for 9x13 pan using 2 boxes, normally around 45 to 50 minutes.
