Melt 1 stick of butter in a skillet and add 4 cloves of minced garlic.

Cut 1 loaf of French bread in half lengthwise, the each half in half again. Place the bread pieces on a baking sheet. Brush the melted garlic butter onto the bread.

Grate ½ cup Parmesan cheese.

In a bowl, add 3 ½ cups grated cheddar cheese, ¾ cup grated Monterey jack cheese and Parmesan cheese with ½ cup mayonnaise and 4 minced green onions. Add dash of salt to taste.

Mix the cheeses and mayo until well combined.

Spread cheese mixture on bread pieces.

Bake in a 425 F oven until cheese is hot and bubbly, about 10 minutes.

Slice and serve.

Ingredients

  • 3 ½ cups grated cheddar cheese
  • ¾ cup grated Monterey jack cheese
  • ½ cup grated Parmesan cheese
  • ½ cup real mayonnaise
  • 4 whole green onions white and light green parts minced
  • Dash salt
  • 1 loaf crusty French bread
  • 1 stick butter
  • 4 cloves garlic finely chopped

Instructions

  1. Mix cheeses with mayonnaise and the green onions. Add dash of salt to taste and set aside or keep in refrigerator until you need it.
  2. Cut loaf of bread in half, the each half in half again. Working ¼ loaf at a time, melt 2 tbsp butter in a skillet and add ¼ of the minced garlic. Place 1 of the ¼ loaves face down in the skillet. Swirling to soak up the butter and garlic. Allow bread to toast in skillet, removing garlic if it starts to get too brown.
  3. Repeat with remaining butter, garlic and bread.
  4. Spread cheese mixture on warm loaves and bake in a 425 F oven until cheese is hot and bubbly, about 10 minutes.
  5. Slice and serve.

Recipe Notes

I brush the bread with the melted butter and garlic, the loaf I purchased was too big for my skillet. Low fat mayonnaise can be used, but not fat free mayonnaise, since the fat free doesn’t bake as well. A variety of cheeses can be used, just have them add up to the amount the recipe requires. I used a cheddar, colby and mozzarella mixture. You can use cheeses that go better with the meal you are preparing.
