I stole this recipe for Baked Ranch Rice from plainchicken.com. This delicious side dish can be used for a weeknight meal or a holiday meal. Uncooked long-grain rice, chicken broth, dry ranch dressing mix and butter are added to a baking dish. Then the dish is covered with foil and baked for 30 minutes. Next the foil is removed and the rice is stirred before baking another 20 to 30 minutes. The rice is fluffed before serving. This recipe is a new way to make rice but is worth trying.

The ingredients for this recipe are: 1 cup uncooked long-grain white rice, 2 ⅔ cups unsalted chicken broth, 1 (1 oz) package ranch dressing mix and 6 tbsp unsalted butter

Rinse the rice with water.

Spray a 9×9 baking dish with cooking spray. Then add all the ingredients to the prepared pan.

Stir to combine ingredients.

Cover the pan tightly with foil. Bake at 425 F for 30 minutes. Remove the foil.

Stir the rice and bake for 20 to 30 minutes.

Fluff the rice with a fork.
