Baked Ranch Rice

This delicious side dish can be used for a weeknight meal or a holiday meal. Uncooked long-grain rice, chicken broth, dry ranch dressing mix and butter are added to a baking dish. Then the dish is covered with foil and baked for 30 minutes. Next the foil is removed and the rice is stirred before baking another 20 to 30 minutes. The rice is fluffed before serving.

Ingredients

  • 1 cup uncooked long-grain white rice rinsed
  • 2 ⅔ cups unsalted chicken broth
  • 1 package (1 oz) ranch dressing mix
  • 6 tbsp unsalted butter

Instructions

  1. Preheat oven to 425 F. Spray a 9x9 baking dish with cooking spray.
  2. Add all the ingredients to the prepared pan.
  3. Cover the pan tightly with foil.
  4. Bake for 30 minutes.
  5. Remove the foil. Stir the rice and bake for 20 to 30 minutes.

Recipe Notes

This recipe easily doubles and can be baked in a 9x13 baking dish.
