
I stole this recipe for Air Fryer Parmesan Spinach Stuffed Mushrooms from a cookbook called Six Sisters’ Stuff: 30 Minute Meals. These delicious stuffed mushrooms are perfect for the upcoming holidays. Water is added to boxed stuffing mix and set aside. Then stems are removed from mushroom caps. The stems are chopped and cooked in a skillet with garlic. Next the cooked mushrooms stems, spinach, mozzarella & Parmesan cheeses are added to the stuffing mixture. The filling is spooned into the mushrooms. An air fryer is preheated to 350 F, then the mushrooms are cooked for 10 minutes until golden. This vegetable recipe is so tasty, the kids will eat it themselves.

The ingredients for this recipe are: 1 ½ cups hot water, 1 (6 oz) package chicken flavored, stove top stuffing mix, 2 lbs fresh mushrooms, 2 tbsp butter, 2 cloves garlic, 1 cup chopped spinach, 1 cup shredded mozzarella cheese and 1 cup grated Parmesan cheese

Remove stems from mushroom caps. Set caps aside and chop stems.

In a large bowl, mix the hot water and stuffing mix. Stir until moistened. Set aside.

Then add the chopped mushroom stems and garlic to a skillet with the butter.

Cook for 5 minutes or until tender.

Then add mushroom stems to stuffing mixture with spinach and cheeses.

Mix well to combine.

Next spoon the mixture into mushroom caps.

Spray the air fryer basket with cooking spray. Place the filled mushrooms inside.

Cook at 350 F for 10 minutes. The mushrooms should be dark brown and the cheese and stuffing will be slightly golden.

Serve warm and enjoy!

- Non-stick cooking spray
