Air Fryer Parmesan Spinach Stuffed Mushrooms

These delicious stuffed mushrooms are perfect for the upcoming holidays. Water is added to boxed stuffing mix and set aside. Then stems are removed from mushroom caps. The stems are chopped and cooked in a skillet with garlic. Next the cooked mushrooms stems, spinach, mozzarella & Parmesan cheeses are added to the stuffing mixture. The filling is spooned into the mushrooms. An air fryer is preheated to 350 F, then the mushrooms are cooked for 10 minutes until golden.

Ingredients

  • 1 ½ cups hot water
  • 1 package (6 oz) chicken flavored, stove top stuffing mix
  • 2 lbs fresh mushrooms whole
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1 cup chopped spinach
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Non-stick cooking spray

Instructions

  1. In a large bowl, mix the hot water and stuffing mix. Stir until moistened. Set aside.
  2. Remove stems from mushroom caps. Set caps aside and chop stems. Melt butter in a skillet on medium heat. Add chopped stems and garlic, cook for 5 minutes or until tender.
  3. Add mushroom stems to stuffing mixture with spinach and cheeses. Mix well. Spoon into mushroom caps.
  4. Spray the air fryer basket with cooking spray. Place the filled mushrooms inside.
  5. Cook at 350 F for 10 minutes. The mushrooms should be dark brown and the cheese and stuffing will be slightly golden.
