
I stole this recipe for Classic Coca Cola Cake from spicysouthernkitchen.com. This delicious chocolate cake bakes in a 9×13 baking dish, so it’s perfect to bring to a party. Butter and sugar are creamed together in a bowl, then eggs and vanilla are added. In another bowl flour, cocoa powder and baking soda are whisked together. Next dry ingredients are added to the wet ingredients with buttermilk and Coca Cola. Mini marshmallows are stirred into the batter before pouring in a baking dish. After baking and cooling a frosting is made with butter, Coca Cola, cocoa powder, powdered sugar and vanilla. This frosted chocolate cake can be served for any occasion, even birthdays.

The ingredients for this recipe are: 1 cup Coca-Cola, ½ cup buttermilk, 1 cup butter, 1 ¾ cup granulated sugar, 2 large eggs, 2 tsp vanilla extract, 2 cups AP flour, ¼ cup unsweetened cocoa powder, 1 tsp baking soda and 1 ½ cups mini marshmallows

Using an electric mixer beat the butter until creamy. Gradually beat in sugar. Add in the eggs and vanilla and beat on low speed until blended.

Then in a separate bowl combine flour, cocoa powder and baking soda.

Add the flour mixture to the butter mixture in 3 additions.

Alternate adding the dry ingredients with buttermilk and Coca Cola finishing with the dry ingredients.

Stir in the marshmallows.

Pour the batter into prepared baking dish. Bake at 350 F for 30 to 35 minutes. Let cool for 10 minutes before adding icing.

The ingredients for the icing are: ½ cup butter, ⅓ cup Coca-Cola, 3 tbsp unsweetened cocoa powder, 16 oz box confectioner’s sugar and 2 tsp vanilla extract

Combine the butter, Coca-Cola and cocoa powder in a large saucepan and place over medium heat until butter is melted, stirring frequently.

Remove from the heat. Whisk in the confectioner’s sugar and vanilla.

Pour on top of cake.

Spread icing evenly on top of the cake.

Slice and serve.

- 1 cup Coca-Cola

- ½ cup butter
- ⅓ cup Coca-Cola
- 3 tbsp unsweetened cocoa powder
- 16 oz box confectioner’s sugar
- 2 tsp vanilla extract
