Most Requested Chocolate Cake

I stole this recipe for Most Requested Chocolate Cake from kraftrecipes.com. This decadent chocolate cake is actually very similar to a chocolate cake a famous restaurant sells. Bakers chocolate is melted and mixed with mayonnaise (it’s the secret ingredient), sugar and vanilla. A flour mixture and boiling water are added to the chocolate mixture; and then the cakes are baked. Chocolate frosting is made using more Bakers chocolate and butter that is mixed with powdered sugar, milk and vanilla.

Preheat oven to 350 F. Line 2 (9 inch) pans with parchment, spray parchment with cooking spray. Melt 6oz Bakers unsweetened chocolate as directed on package; cool.

In a large bowl add 1 ½ cup Miracle Whip dressing, 2 ¼ cup packed brown sugar and 2 tsp vanilla extract.

Beat with an electric mixer until blended. Beat in 3 eggs and melted chocolate.

In a separate bowl combine 2 cups flour, 1 ½ tsp baking soda and ¼ tsp salt. Add to a small portion to the chocolate mixture.

Alternately add flour with 1 cup boiling water to the chocolate mixture, mixing well after each addition.

Pour batter into prepared pans.

Bake 30 to 35 minutes or until toothpick comes out clean. Cool 10 minutes in pans. Remove from pans, transfer to wire rack, removing parchment.

Microwave 4oz chocolate and ¼ cup butter in a large microwavable bowl on HIGH 1 – 1 ½ min or until butter is melted, stirring every 30 seconds. Stir until chocolate is completely melted, cool. Add 3 cups powdered sugar, ⅔ cup milk and 1 tsp vanilla to butter mixture.

Beat with an electric mixer until well blended.

Then use the frosting to fill and frost cake layers.

Slice and enjoy the chocolatey goodness.
