Butter and sugar are creamed together in a bowl, then eggs and vanilla are added. In another bowl flour, cocoa powder and baking soda are whisked together. Next dry ingredients are added to the wet ingredients with buttermilk and Coca Cola. Mini marshmallows are stirred into the batter before pouring in a baking dish. After baking and cooling a frosting is made with butter, Coca Cola, cocoa powder, powdered sugar and vanilla.

Ingredients
1cupCoca-Cola
½cupbuttermilk
1cupbuttersoftened
1 ¾cupgranulated sugar
2large eggs
2tspvanilla extract
2cupsAP flour
¼cupunsweetened cocoa powder
1tspbaking soda
1 ½cupsmini marshmallows
Coca-Cola Icing
½cupbutter
⅓cupCoca-Cola
3tbspunsweetened cocoa powder
16ozbox confectioner’s sugar
2tspvanilla extract
Instructions
Preheat oven to 350 F and spray a 9x13 baking pan with cooking spray.
Combine Coca-Cola and buttermilk in a glass measuring cup. Set aside.
Using an electric mixer beat the butter until creamy.
Gradually beat in sugar.
Add in the eggs and vanilla and beat on low speed until blended.
In a separate bowl combine flour, cocoa powder and baking soda.
Add the flour mixture to the butter mixture in 3 additions, alternating with buttermilk mixture in 2 additions. (dry/liquid/dry/liquid/dry) Beat until just blended.
Stir in the marshmallows. Pour the batter into prepared baking dish.
Bake for 30 to 35 minutes. Let cool for 10 minutes before adding icing.
To make the icing: combine the butter, Coca-Cola and cocoa powder in a large saucepan and place over medium heat until butter is melted, stirring frequently.
Remove from the heat. Whisk in the confectioner’s sugar and vanilla. Pour on top of cake.
