
I stole this recipe for Slow Cooker Queso Chicken Tacos from plainchicken.com. This easy to make slow cooker recipe is perfect for Taco Tuesdays. Chicken breasts are placed in a slow cooker. Then taco seasoning is sprinkled on top of the chicken. Next a can of Rotel tomatoes is added to the slow cooker. The chicken cooked for several hours in the slow cooker, then the chicken is shredded. Mexican cheese dip is stirred into the shredded cheese mixture. Then the chicken is served in soft or hard taco shells with your favorite taco toppings. This recipe can be made anytime you have a taste for tacos even when it isn’t Tuesday.

The ingredients for this recipe are: 2 lbs boneless skinless chicken breasts, 1 oz package taco seasoning, 10 oz can Rotel diced tomatoes and green chilies and 1 ½ cups Mexican cheese dip

Place chicken in a 6 qt slow cooker. Sprinkle with taco seasoning.

Then add the canned tomatoes.

Cover and cook on LOW for 4 to 6 hours. Remove chicken from slow cooker and shred with two forks.

Return the shredded chicken to the slow cooker.

Then stir in the cheese dip.

Place the chicken in tortillas, soft or hard taco shells.

Then add your desired toppings.

Recipe Notes
If there is too much liquid when shredding chicken, drain before adding cheese dip.
