
I stole this recipe for Creamy Chicken Orzo with Mushrooms and Spinach from juliasalbum.com. This one skillet meal is a quick and easy weeknight recipe. Chicken is seasoned and cooked in a skillet. Then the chicken is removed and mushrooms are cooked in the same skillet. Half of the mushrooms are removed from the skillet. Next uncooked orzo, chicken broth, garlic and spices are added to the skillet. Once the broth is boiling, the orzo is cooked until done then spinach and cream are added before adding the remaining mushrooms and chicken back to the skillet. This recipe is a perfect way to eat chicken when you’re late to planning dinner.

The ingredients for this recipe are: 1 lb chicken breasts, 1 tsp Italian seasoning, 1 ½ tsp paprika, ¼ tsp salt, 3 tbsp olive oil, 8 oz baby bella mushrooms, 1 cup orzo, 2 cups chicken broth, 5 cloves garlic, ½ tsp Italian seasoning, 5 oz fresh spinach and ½ cup heavy cream

Season chicken with Italian seasoning, salt and pepper. Add 2 tbsp olive oil to skillet on medium heat. Cook chicken 5 minutes per side.

Remove chicken from skillet.

Then add mushrooms to skillet, generously season with salt and pepper.

Cook on medium heat for 2 minutes until browned and softened. Remove half of the mushrooms from the skillet, then leave the remaining half in the skillet.

Next add uncooked orzo to the skillet.

Add the chicken broth, garlic, Italian seasoning, paprika and ¼ tsp salt to skillet with the mushrooms.

Bring to a boil, then reduce to a simmer on medium-low heat and cook for 5 to 10 minutes, occasionally stirring to prevent the orzo from sticking to the bottom of the pan until the orzo is cooked through. Then add fresh spinach during the last 5 minutes of cooking.

Next add ½ cup cream. Stir everything on low-medium heat – don’t boil. Season with salt and pepper.

Stir in the remaining mushrooms. Return chicken to skillet. Reheat on low heat.

Serve warm from the skillet and enjoy!
