This one skillet meal is a quick and easy weeknight recipe. Chicken is seasoned and cooked in a skillet. Then the chicken is removed and mushrooms are cooked in the same skillet. Half of the mushrooms are removed from the skillet. Next uncooked orzo, chicken broth, garlic and spices are added to the skillet. Once the broth is boiling, the orzo is cooked until done then spinach and cream are added before adding the remaining mushrooms and chicken back to the skillet.

Ingredients
Chicken
1lbchicken breastsboneless, skinless
1tspItalian seasoning
1tsppaprika
¼tspsalt
2tbspolive oil
Mushrooms
1tbspolive oil
8ozbaby bella mushrooms or cremini
Salt and pepper
Creamy Orzo
1cuporzouncooked
2cupschicken broth or stock
5clovesgarlicminced
½tspItalian seasoning
½tsppaprika
¼tspsalt
5ozfresh spinach
½cupheavy cream
¼tspred pepper flakes
Instructions
Chicken
Season chicken with Italian seasoning, salt and pepper. Add 2 tbsp olive oil to skillet on medium heat. Cook chicken 5 minutes per side. Remove chicken from skillet.
Mushrooms
Add mushrooms to skillet, generously season with salt and pepper. Cook on medium heat for 2 minutes until browned and softened. Remove half of the mushrooms from the skillet, leave the remaining half in the skillet.
Orzo
Add uncooked orzo, chicken broth, garlic, Italian seasoning, paprika and ¼ tsp salt to skillet with the mushrooms.
Bring to a boil, then reduce to a simmer on medium-low heat and cook for 5 to 10 minutes, occasionally stirring to prevent the orzo from sticking to the bottom of the pan until the orzo is cooked through.
Add fresh spinach during the last 5 minutes of cooking.
Add ½ cup cream. Stir everything on low-medium heat – don’t boil. Season with salt and pepper.
Stir in the remaining mushrooms. Return chicken to skillet. Reheat on low heat.
