A breading is made with breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper. The zucchini fries are coated in flour, beaten eggs and then in the breading. Next the breaded zucchini are cooked in an air fryer until brown and crispy. This vegetable recipe is sure to impress even people who don’t like vegetables.
The ingredients for this recipe are: 2 medium zucchini, ½ cup AP flour, 2 large egg, 1 cup Panko breadcrumbs, ½ cup grated Parmesan cheese, 1 tbsp Italian seasoning, 2 tsp garlic powder, ½ tsp salt and ¼ tsp black pepper
Trim off the ends of the zucchini. Cut each zucchini in half crosswise. Then slice zucchini into ½ inch fries. In one bowl place the flour. Then in a second bowl lightly beat the eggs. In the third dish, stir together the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper.
Then coat the zucchini fries in flour.
Dip the dredged zucchini in the beaten eggs.
Finally coat each piece with the breadcrumb mixture. Arrange the fries in a single layer in the air fryer basket, leaving a little space in between each fry for air circulate.
Air fry at 400 F for 10 to 12 minutes, until the outsides are browned and crispy and the insides are tender.
Move the cooked zucchini to a baking sheet to keep warm in the oven between cooking batches.
