Air Fryer Zucchini Fries

This tasty appetizer is perfect for any holiday gathering. Zucchini are cut into fries. A breading is made with breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper. The zucchini fries are coated in flour, beaten eggs and then in the breading. Next the breaded zucchini are cooked in an air fryer until brown and crispy.

Ingredients

  • 2 medium zucchini
  • ½ cup AP flour
  • 2 large egg
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • 2 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray

Instructions

  1. Trim off the ends of the zucchini. Cut each zucchini in half crosswise. Then slice zucchini into ½ inch fries.
  2. In one bowl place the flour. In a second bowl lightly beat the eggs. In the third dish, stir together the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper.
  3. Coat the zucchini in the flour and gently tap off the excess. Then coat in egg, making sure to coat all sides. Finally coat each piece with the breadcrumb mixture.
  4. Arrange the fries in a single layer in the air fryer basket, leaving a little space in between each fry for air circulate. Cook in batches. Spray the tops of the fries with oil spray.
  5. Air fry at 400 F for 10 to 12 minutes, until the outsides are browned and crispy and the insides are tender.
  6. Serve warm.
