Strawberry Waffles

I stole this recipe for Strawberry Waffles from Kathrynskitchenblog.com. These delicious waffles have strawberries added to the batter. Flour, eggs, salt, baking powder, vanilla, strawberry jam, sugar, milk and butter are mixed together in a bowl. Then fresh diced strawberries are folded into the batter. After letting the batter sit for 10 minutes, a waffle iron is preheated. Next the batter is poured into the waffle maker and the waffle is cooked until golden. The finished waffles are served with more strawberries and syrup, if there’s enough left.

The ingredients for this recipe are: 2 cups AP flour, 2 whole large eggs, ¼ tsp salt, 2 tsp baking powder, 1 tsp vanilla extract, 1 ½ tbsp strawberry jam, 1 tbsp granulated sugar, 1 ½ cups milk, ¼ cup melted butter, and 1 cup fresh diced strawberries

Dice the strawberries and pat dry with paper towels and set aside until needed.

In a large mixing bowl, add the dry ingredients together.

Then add the eggs, butter, milk, vanilla and strawberry jam.

Fold in the strawberries and let the batter sit for 5 to 10 minutes.

In the meantime, heat a waffle iron and grease with non-stick cooking spray or melted butter. Pour about ¼ cup of the batter into the waffle iron (or until the batter covers the waffle iron).

Cook until ready, about 2 to 3 minutes or according to the waffle maker.

Serve immediately, or place the cooked waffles in a 300 F oven to keep warm until ready to serve. Top with more fresh strawberries or dust with powdered sugar.
