I stole this recipe for Avocado Tomato Salad from delish.com. This delicious salad is quick and easy to make. The salad dressing is made with olive oil, lemon juice, cumin, salt and pepper. Then chopped avocado, cucumbers and tomatoes are mixed with corn. Next the dressing is poured over the vegetables and everything is mixed together before serving. This filling salad can be a snack or a meal, even if someone else might not think so.
The ingredients for this recipe are: ¼ cup olive oil, juice 1 lemon, ¼ tsp cumin, salt, pepper, 3 avocados, 1 pt cherry tomatoes, 1 small cucumber, ⅓ cup corn and 2 tbsp freshly chopped cilantro
In a large bowl, combine chopped avocados, halved or quartered cherry tomatoes, diced cucumber, corn, and cilantro. Fresh, canned or frozen corn can be used. If you use canned, drain the water first. Or if using frozen, thaw and drain before using.
Then in a small bowl, whisk together oil, lemon juice and cumin. Season dressing with salt and pepper. Gently toss the vegetables with dressing.
Serve immediately or refrigerate until ready to serve.

Ingredients
- ¼ cup olive oil
- Juice 1 lemon
- ¼ tsp cumin
- Salt

- 3 avocados cubed
- 1 pt cherry tomatoes halved
- 1 small cucumber sliced into half moons
- ⅓ cup corn
- 1 jalapeno minced (optional)
- 2 tbsp freshly chopped cilantro
