I stole this recipe for Pistachio Pudding Bread from lynnmumblingmejia.com. This delicious dessert is a perfect holiday treat and travels well to any holiday party. First sugar, eggs and butter are mixed together. Then milk, pistachio pudding mix, baking powder and salt are added to the bowl. Flour is folded into the mixture before the batter is poured into a loaf pan. The bread is baked until a toothpick comes out clean. After cooling the bread is topped with a mixture of powdered sugar and milk and then sprinkled with chopped pistachios. This sweet bread loaf is made without any crazy ingredients from the grocery store.
The ingredients for this recipe are: 1 ½ cups AP flour, 2 large eggs, ½ cup butter, ¼ tsp salt, 1 tsp baking powder, ¾ cup white sugar, ⅔ cup 2% milk, 1 package Jello Pistachio Pudding Mix, ¼ cup chopped pistachios, 1 cup icing sugar and 2 tbsp 2% milk
Chop the pistachios and set aside.
In a large mixing bowl, add the sugar, eggs and butter and mix well.
Then add the milk, pudding mix, baking powder and salt and mix well.
Next add the flour and fold in the batter, if desired add ¼ cup chopped pistachios.
Spread the batter into a greased loaf pan.
Bake in a 350 F oven for 40 to 50 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 to 15 minutes, then transfer to a cooling rack to cool completely.
Whisk together milk and icing sugar. Spread on the top of the loaf, letting drip off the sides. Sprinkle with chopped pistachios.

Ingredients
- 1 ½ cups AP flour
- 2 large eggs
- ½ cup butter
- ¼ tsp salt
- 1 tsp baking powder
- ¾ cup white sugar
- ⅔ cup 2% milk
- 1 package Jello Pistachio Pudding Mix
Icing
- ¼ cup chopped pistachios
- 1 cup icing sugar
- 2 tbsp 2% milk

Preheat oven to 350 F and grease a loaf pan.

In a large mixing bowl, add the sugar, eggs and butter and mix well.

Then add the milk, pudding mix, baking powder and salt and mix well.

Next add the flour and fold in the batter one last time. Once everything is mixed well with no lumps of flour, pour into the loaf pan.

Bake in the oven for 40 to 50 minutes or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 to 15 minutes, then transfer to a cooling rack to cool completely.

Whisk together milk and icing sugar. Spread on the top of the loaf, letting drip off the sides. Sprinkle with chopped pistachios.
Recipe Notes
