I stole this recipe for Zucchini Fritters from damndelicious.net. These zucchini fritters are a delicious side dish or appetizer. First zucchini is grated and tossed with salt, then left in a colander for ten minutes to draw out the moisture from the zucchini. Next the drained zucchini is placed in a bowl and mixed with flour, Parmesan cheese, minced garlic, an egg, salt and pepper. Then the batter is scooped into a hot skillet and cooked until brown. The finished fritters are served with salt or Parmesan cheese. This recipe is so good even someone who doesn’t want to eat vegetables will like it.
The ingredients for this recipe are: 1 ½ lbs zucchini, 1 tsp salt, ¼ cup flour, ¼ cup Parmesan cheese, 2 cloves garlic, 1 large egg, salt, pepper and 2 tbsp olive oil
Place grated zucchini in a colander over the sink or a bowl. Add the salt and gently toss to combine.
Then let zucchini sit for 10 minutes. Using a clean dish towel or cheese cloth, drain completely.
Next in a large bowl, combine the drained zucchini, flour, Parmesan cheese, garlic and egg; season with salt and pepper to taste.
Heat olive oil in a large skillet over medium high heat. Scoop tablespoon of batter for each fritter into the skillet.
Cook flattening with a spatula and cook until the underside is nicely golden brown, about 2 minutes. Flip and cook on the other side, about 1 to 2 minutes longer.
Move the cooked fritters to a parchment lined baking sheet and sprinkle with salt. Then repeat with remaining batter.
Serve warm with grated Parmesan cheese.
