Zucchini Fritters

These zucchini fritters are a delicious side dish or appetizer. First zucchini is grated and tossed with salt, then left in a colander for ten minutes to draw out the moisture from the zucchini. Next the drained zucchini is placed in a bowl and mixed with flour, Parmesan cheese, minced garlic, an egg, salt and pepper. Then the batter is scooped into a hot skillet and cooked until brown. The finished fritters are served with salt or Parmesan cheese.
