Slow Cooker Chicken Noodle Soup

I stole this recipe for Slow Cooker Chicken Noodle Soup from damndelicious.net. This slow cooker recipe is a perfect winter meal. Chicken breasts are seasoned and placed in a slow cooker. Then onion, carrots, celery, bay leaves and seasoning are added to the slow cooker. Chicken stock is poured in and then everything is stirred together. After cooking on low for several hours, the chicken is removed and shredded. The chicken is returned to the pot with uncooked pasta. Next the soup cooks until the pasta is tender. Chicken noodle soup is a crowd pleaser that doesn’t need any adjustments.

The ingredients for this recipe are: 1 ½ lbs boneless, skinless chicken breasts, salt, pepper, 8 cups chicken stock, 4 garlic cloves, 1 onion, 3 carrots, 3 stalks celery, ½ tsp dried thyme, ½ tsp dried rosemary, 2 bay leaves, 8 oz spaghetti, juice of 1 lemon and 2 tbsp chopped fresh parsley

Season chicken with salt and pepper, to taste. Place chicken into 6 quart slow cooker.

Then chopped celery, onions and carrots are added with minced garlic, seasonings and bay leaves.

Then the chicken stock is poured into the slow cooker and everything is stirred together. Cover and cook on LOW for 6 to 8 hours.

Remove the chicken from slow cooker and shred, using forks.

Return the shredded chicken to the slow cooker.

Next break the spaghetti into thirds and add to the slow cooker.

Cover and cook on LOW heat for an additional 30 to 40 minutes, or until pasta is tender. Stir in lemon juice and parsley before serving.
