I stole this recipe for Instant Pot Tuscan Chicken Pasta from sixsistersstuff.com. This delicious pressure cooker recipe is perfect for any weeknight meal. Chicken is sautéed in pot of a pressure cooker. Then pasta, butter and chicken stock are added to the chicken. After cooking for 3 minutes, cream cheese, milk, garlic salt, black pepper and Parmesan cheese are stirred into the noodles and chicken. Next the pressure cooker is changed to sauté and sun-dried tomatoes and spinach are stirred in until the spinach is cooked. This dinner is so quick and easy to make, you won’t need to worry about getting dinner delivered.
The ingredients for this recipe are: 2 boneless, skinless chicken breasts, 2 cups ditalini pasta, 2 cups chicken broth, 2 tbsp butter, 8 oz cream cheese, ½ cup milk, ½ cup grated Parmesan cheese, 4 oz sun dried tomatoes, ½ tsp garlic salt, ½ tsp black pepper, 1 tbsp dried basil and 2 cups fresh spinach leaves
Sauté the diced seasoned chicken in the Instant Pot on the sauté function.
Then add the pasta, chicken broth and butter to the pot.
Set on manual for 3 minutes. Once the timer goes off, allow a natural pressure release for 5 minutes before releasing valve to remove remaining pressure. Remove the lid and stir the noodles and chicken.
Turn off the manual button and push the sauté button. Stir in the cream cheese, milk, garlic salt, black pepper and Parmesan cheese.
Next add in the sun-dried tomatoes and spinach.
Cook while stirring until spinach is cooked down a bit.
Serve hot and enjoy.

Ingredients

- 1 tbsp dried basil
- 2 cups fresh spinach leaves
Instructions
