Instant Pot Tuscan Chicken Pasta

This delicious pressure cooker recipe is perfect for any weeknight meal. Chicken is sautéed in pot of a pressure cooker. Then pasta, butter and chicken stock are added to the chicken. After cooking for 3 minutes, cream cheese, milk, garlic salt, black pepper and Parmesan cheese are stirred into the noodles and chicken. Next the pressure cooker is changed to sauté and sun-dried tomatoes and spinach are stirred in until the spinach is cooked.

Ingredients

  • 2 boneless, skinless chicken breasts, cooked and diced
  • 2 cups ditalini pasta
  • 2 cups chicken broth
  • 2 tbsp butter
  • 8 oz cream cheese
  • ½ cup milk
  • ½ cup grated Parmesan cheese
  • 4 oz sun dried tomatoes drained and chopped
  • ½ tsp garlic salt
  • ½ tsp black pepper
  • 1 tbsp dried basil
  • 2 cups fresh spinach leaves

Instructions

  1. Sauté chicken in Instant Pot, then dice.
  2. Add the pasta, chicken broth, butter and chicken to the pot.
  3. Set on manual for 3 minutes.
  4. Once the timer goes off, allow a natural pressure release for 5 minutes before releasing valve to remove remaining pressure.
  5. Remove lid and stir the noodles and chicken.
  6. Turn off the manual button and push the sauté button.
  7. Stir in the cream cheese, milk, garlic salt, black pepper and Parmesan cheese.
  8. Add in the sun-dried tomatoes and spinach stirring until spinach is cooked down a bit.
  9. Serve hot.
