I stole this recipe for Taco Ranch Chicken from plainchicken.com. This recipe is twist on regular grilled chicken. First a marinade is made with olive oil, ranch dressing, a package of taco seasoning, lime juice and white vinegar. Then chicken is marinated for several hours before grilling. The chicken is delicious on its own or used in a salad or any way you like, this easy marinade is perfect for beginners. This recipe is a perfect way to end a summer of grilling.
The ingredients in this recipe are: ½ cup olive oil, ½ cup ranch dressing, 2 tbsp taco seasoning, 1 tsp lime juice, 1 tbsp white vinegar and 4 skinless, boneless chicken breast halves.
In a medium bowl, add the olive oil, ranch dressing, taco seasoning, lime juice and white vinegar.
Whisk the ingredients together until well blended.
Place chicken in resealable bag, then pour marinade over chicken. Refrigerate 8 hours or overnight.
Preheat grill to medium-high heat. Remove chicken from the marinade and place on the grill.
Grill chicken for 8 to 12 minutes, or until chicken is no longer pink in the center and the juices run clear.
Serve warm and enjoy!
