I stole this recipe for Honey Roasted Nuts from suebeehomemaker.com. This delicious nut recipe is perfect for a summer get together. Almonds and cashews (or any nut mix preference) are mixed in a bowl. Then honey is heated in the microwave until bubbly. Next cinnamon, salt and cayenne pepper are added to the honey. The honey is poured over the nuts and then the nuts are baked until golden brown. Immediately after removing from the oven, brown sugar is sprinkled on top of the nuts. After cooling, the nuts are broken up and ready to serve. There are lots of nuts in this recipe for those with a food allergy.
The ingredients for this recipe are: 2 cups raw almonds, 2 cups raw cashews, ⅓ cup raw honey, 1 tsp salt, ¾ tsp cayenne pepper, ½ tsp cinnamon, 2 tbsp brown sugar and sprinkle kosher salt
Preheat oven to 350 F. Prepare baking sheet with parchment paper. Mix almonds and cashews together in a mixing bowl. (I use a store package of mixed nuts made up of pecans, almonds, cashews, peanuts and Brazil nuts.)
Then pour the honey in a small microwave safe bowl. Heat for 30 seconds to a minute, just until the honey starts to bubble and become liquidly. Remove and add cayenne pepper (optional), cinnamon and salt. Stir well.
Next pour honey mixture over the nuts and mix well, until the nuts are well coated. Pour nuts onto the prepared baking sheet.
Then spread the nuts around evenly on the pan. Bake for 15 to 20 minutes or until the nuts are fragrant and nice and golden brown. Remove from oven and sprinkle 2 tbsp of brown sugar over the top.
Stir to coat all of the nuts with the brown sugar.
Then let the nut mixture cool for 10 minutes.
Break up nuts with fingers and then let them finish cooling. Then serve and enjoy!

Recipe Notes
Cayenne pepper can be omitted. Store in refrigerator in warmer months or in airtight container on counter top. Can be frozen in freezer bags for up to 3 months.
