Then beat eggs, butter, oil, vanilla and granulated sugar together. Next fold in some chopped apples. Pour half of the batter into a bundt pan, sprinkle with a cinnamon sugar mixture, then repeat with the second half of the batter. Preheat oven to 350 F. Sift flour, baking powder, cinnamon and salt together in a small bowl; set aside.
Then in a large bowl, beat eggs, butter, oil, vanilla and granulated sugar until creamy and smooth.
Next stir in the flour mixture until well combined.
Next fold in apples gently until combined.
In a separate bowl stir 4 tsp cinnamon and 4 tbsp brown sugar together and set aside.
Next grease a bundt pan generously with non-stick spray. Coat with granulated sugar. At this time, pour half of the batter into the pan. Sprinkle with half of the cinnamon sugar mixture, then swirl with a knife. Repeat with remaining batter and cinnamon sugar.
Bake in oven for 50-60 minutes. Top will be golden brown and sides will pull away from pan. Cool 10-15 minutes in pan. Remove and cool completely.
The finished cake can be served as is, topped with powdered sugar or topped with the vanilla glaze from White Chocolate Snickerdoodle Blondies.
