Cinnamon Apple Bundt Cake

This delicious cake recipe is very easy to make. Start with mixing flour, baking powder, cinnamon and salt in a bowl. Then beat eggs, butter, oil, vanilla and granulated sugar together. Next fold in some chopped apples. Pour half of the batter into a bundt pan, sprinkle with a cinnamon sugar mixture, then repeat with the second half of the batter. Swirl the batter and cinnamon sugar together with a knife and bake until golden. Serve with powdered sugar or glaze.

Ingredients

  • 4 eggs
  • 2 cups granulated sugar
  • ½ cup vegetable oil
  • ½ cup butter softened to room temperature
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 cups AP flour
  • 4 tsp baking powder
  • ½ tsp kosher salt
  • 4 cups peeled and grated apples or small chop
  • 4 tsp cinnamon
  • 4 tbsp brown sugar

Instructions

  1. Preheat oven to 350 F.
  2. Sift flour, baking powder, cinnamon and salt together in a small bowl; set aside.
  3. In a large bowl, beat eggs, butter, oil, vanilla and granulated sugar until creamy and smooth.
  4. Stir in flour mixture until well combined.
  5. Stir in apples gently until combined.
  6. In a separate bowl stir 4 tsp cinnamon and 4 tbsp brown sugar together and set aside.
  7. Grease bundt pan generously with non-stick spray. Coat with granulated sugar.
  8. Pour half of the batter into the pan. Sprinkle with half of the cinnamon sugar mixture, swirl with a knife. Repeat with remaining batter and cinnamon sugar.
  9. Bake in oven for 50-60 minutes. Top will be golden brown and sides will pull away from pan.
  10. Cool 10-15 minutes in pan. Remove and cool completely.

Recipe Notes

Add chopped pecans with apples if desired. Vanilla Glaze: 1 cup powdered sugar, 1 tbsp heavy cream or milk and ¼ tsp vanilla Stir and drizzle. Refrigerate to set if needed.
