I stole this recipe for Chocolate Pecan Pie Snack Mix from tasteofhome.com who stole it from Annette Niemiec from Scottsdale, AZ. This tasty treat starts with three types of chex cereal. Rice, chocolate and honey nut chex are mixed together in a bowl and set aside. A coating is made with a cooked mixture of brown sugar, butter and corn syrup. Then the cereal mixture is tossed with the coating and pecans. After spreading the mixture out to cool, melted chocolate is drizzled on top.
For this recipe you will need: 4 cups rice chex, 4 cups chocolate chex, 4 cups honey nut chex, 2 cups coarsely chopped pecans, 1 cup packed brown sugar, ½ cup butter, ⅓ cup light corn syrup, ½ tsp baking soda, 2 cups semisweet chocolate chips and 2 tbsp shortening.
Start with toasting the pecans in a dry skillet.
In a large bowl, combine the cereals and pecans.
Then in a small microwave-safe bowl, combine brown sugar, butter and corn syrup.
Next microwave, uncovered on HIGH for 2 minutes, stirring once. Whisk in baking soda. Pour over cereal mixture; toss to coat.
Cook in batches on HIGH in a microwave safe bowl for 3 minutes, stirring every minute.
Then spread onto wax-paper lined baking sheet to cool completely.
In a microwave safe bowl, melt the chocolate chips and shortening; stir until smooth.
Once the chocolate is melted, drizzle over cereal mixture; refrigerate until set.
Break into pieces. Store in an airtight container at room temperature.
