Sweet Teriyaki Chicken Kabobs

I stole this recipe for Sweet Teriyaki Chicken Kabobs from sweetbabyrays.com. Bottled marinade sauce is the secret to this delicious recipe. Chicken is cut into cubes and marinated in Sweet Baby Ray’s Teriyaki Sauce & Marinade. Then the chicken is placed on skewers with zucchini and pineapples. While grilling, additional marinade is basted on the chicken. Once fully cooked, these tasty kabobs are ready to go. This recipe is so tasty, your neighbors will want to steal it for themselves.

For this recipe you will need: 2 large chicken breasts, 2 small zucchini, 1 ½ cups Sweet Baby Ray’s Sweet Teriyaki Sauce & Marinade and 1 can of pineapple chunks. (The original recipe called for peppers, but I substituted pineapple chunks.)

Cut the chicken into 2 inch cubes. Then combine chicken pieces with 1 cup sauce and marinade for 2-3 hours or overnight.

After marinating the chicken, cut the zucchini into cut 1 inch pieces (rounds) and drain the pineapple chunks.

If using wooden skewers soak in water for 1 hour. Next place the chicken, zucchini and pineapple chunks onto the skewers.

Heat grill to medium high. Drizzle the skewers with olive oil. Then place the kabobs on grill.

Grill until chicken reaches 165 F, turning occasionally. Baste with ½ cup sauce and marinade.

Cover loosely with foil and let sit for 5-10 minutes before serving.
