Herbed Parmesan Bread

I stole this recipe for Herbed Parmesan Bread from a cookbook called Taste of Home: Half Homemade who stole it from Lesley Archer from Chapala, Mexico. This is an easy to make quick bread that is perfect with any soup or stew. Biscuit mix is combined with grated cheese, Italian seasoning and salt. In a separate bowl an egg is mixed with evaporated milk and water. The wet ingredients are folded into the dry ingredients. Then the batter is poured into a greased loaf pan. Additional cheese is sprinkled on top before baking. This is an easy way to make your own bread when you don’t want to go to the store.

For this recipe you will need 3 ¾ cups biscuit baking mix, 1 cup + 2 tbsp grated Parmesan cheese, 1 tsp Italian seasoning, ½ tsp salt, 1 egg, 1 can (5 oz) evaporated milk and ¾ cup water.

Preheat oven to 350 F. In a large bowl, combine the biscuit mix, 1 cup cheese, Italian seasoning and salt.

Make a well in the center of the dry ingredients. Then in a small bowl, whisk egg, milk and water. Pour the wet ingredients in the well of the dry ingredients.

Next, gently fold the wet ingredients into the dry ingredients just until moistened. Transfer to a greased 8×4 in loaf pan. Sprinkle with remaining cheese.

Bake until toothpick inserted in the center comes out clean, 35-40 minutes.

Then cool 10 minutes before removing from pan to a wire rack. Slice and serve!
