Tex-Mex Ranch Potatoes

I stole this recipe for Tex-Mex Ranch Potatoes from the website tablespoon.com. This recipe is a Tex-Mex twist on regular roasted potatoes. Ranch dressing, taco seasoning and cheddar cheese are mixed together. Cubed potatoes are tossed with the ranch dressing mixture. Then the coated potatoes are placed in a baking dish covered with foil. Halfway through the baking, the foil is removed to help crisp the potatoes. Extra cheese is sprinkled on the finished potatoes. These Tex-Mex Ranch Potatoes are a great side dish to serve with a variety of meals.

Cube 2 lbs potatoes into ½ inch cubes. Preheat oven to 350 F. (The original recipe called for red potatoes. You can use any starchy potato you prefer like Russet potatoes. Leaving the skins on the potatoes is optional.)

Then add in ½ cup ranch dressing, 2 tbsp taco seasoning mix (any brand you like) and ¼ cup shredded cheddar cheese. Next, gently stir to coat all of the potatoes.

Then add the coated potatoes to the baking dish. (There was no size mentioned in the recipe, so I just used a 9×13 baking dish. Also, I lined my baking dish with parchment paper for easier clean up.)

Next, cover the dish with foil and bake at 350 F for 45 minutes. Remove the foil and stir the potatoes. Then return the dish to the oven for another 20 minutes or until potatoes are crispy.

When you remove from oven and sprinkle with an additional ¼ cup cheddar cheese. Garnish with scallions.

Ingredients

  • 2 lbs red potatoes
  • 2 tbsp Old El Paso taco seasoning
  • ½ cup ranch dressing
  • ½ cup cheddar cheese
  • ½ cup crumbled bacon optional
  • 4 scallions minced

Instructions

  1. Cube potatoes into ½ inch cubes. Preheat oven to 350 F.
  2. In a large bowl, stir together ranch, taco seasoning and half of the cheese.
  3. Add in potatoes and stir until well coated.
  4. Add the potatoes to baking dish. Cover with foil and bake at 350 F for 45 minutes.
  5. Remove foil and stir potatoes. Return to oven for another 20 minutes or until potatoes are crispy.
  6. Remove from oven and sprinkle with remaining cheese. Garnish with scallions.
