Tex-Mex Ranch Potatoes

This recipe is a Tex-Mex twist on roasted potatoes. Ranch dressing, taco seasoning and cheddar cheese are mixed together. Cubed potatoes are tossed with the ranch dressing mixture. Then the coated potatoes are placed in a baking dish covered with foil. Halfway through the baking, the foil is removed to help crisp the potatoes. Extra cheese is sprinkled on the finished potatoes.

Ingredients

  • 2 lbs red potatoes
  • 2 tbsp Old El Paso taco seasoning
  • ½ cup ranch dressing
  • ½ cup cheddar cheese
  • ½ cup crumbled bacon optional
  • 4 scallions minced

Instructions

  1. Cube potatoes into ½ inch cubes. Preheat oven to 350 F.
  2. In a large bowl, stir together ranch, taco seasoning and half of the cheese.
  3. Add in potatoes and stir until well coated.
  4. Add the potatoes to baking dish. Cover with foil and bake at 350 F for 45 minutes.
  5. Remove foil and stir potatoes. Return to oven for another 20 minutes or until potatoes are crispy.
  6. Remove from oven and sprinkle with remaining cheese. Garnish with scallions.
