
I stole this recipe for Sesame Ginger Zucchini from Forksandfolly.com. This is a quick and easy Asian side dish. Chopped zucchini is cooked in sesame oil until the bottom of the pieces char. Then the zucchini is tossed and cooked with a sauce made from ginger and soy sauce. Once the liquid is evaporated the zucchini is tossed with sesame seeds before serving. Another great way to serve zucchini squash.

For this recipe you will need to chop 3 zucchini into evenly sized chunks. The easiest way is to cut the zucchini into rounds, then quarter the round pieces.

Next, heat a skillet to medium-high heat and pour in 1 tbsp sesame oil. Add the chopped zucchini in a nice even layer. DON’T STIR! Let it sit to develop a char on the bottom. (Charring is not burning. There will be brown on the bottom pieces. Do not let the pieces turn black-that is burning!)

After cooking for 3-4 minutes give the zucchini a nice toss. Again, let it sit in an even layer, for another 3 minutes without stirring.

In a small bowl whisk together 1 tbsp ginger and 2 tbsp soy sauce. Then toss zucchini again, you should see some caramelizing on the bottom now. Reduce the heat a little and pour in the sauce.

Then give everything a nice stir and let some of the liquid evaporate, about 2-3 minutes. Turn off the heat on sprinkle some sesame seeds on the cooked zucchini.

Serve warm. This zucchini recipe is a great side dish to serve with any Asian-inspired main dish like Sweet and Sour Chicken, Easy Hoisin Shrimp, Panda Express Mushroom Chicken or Easy Mongolian Beef.
