Ingredients

  • 3 large zucchini
  • 1 tbsp sesame oil
  • 1 tbsp ginger
  • 2 tbsp soy sauce
  • Sesame seeds

Instructions

  1. Chop zucchini into evenly sized chunks. Cut into rounds, then quarter.
  2. Whisk together ginger and soy sauce; set aside.
  3. Next, heat skillet to medium-high heat and pour in sesame oil. Add zucchini in a nice even layer. DON’T STIR! Let it sit to develop a char on the bottom.
  4. After cooking for 3-4 minutes give the zucchini a nice toss. Again, let it sit, for another 3 minutes without stirring.
  5. Toss again, should see some caramelizing on the bottom now. Reduce heat a little and pour in sauce. Give everything a nice stir and let some of the liquid evaporate, about 2-3 minutes.
  6. Serve in bowl with some sesame seeds.
