Roasted Panko Parmesan Broccoli

Another tasty way to eat broccoli! Broccoli florets are mixed with onions and minced garlic. Olive oil is poured over the broccoli, then breadcrumbs, Parmesan cheese, Italian seasoning, garlic salt, black pepper and red pepper flakes are mixed with the broccoli. Once everything is combined, the mixture is spread on a baking sheet and roasted until the broccoli is crisp.

Ingredients

  • 2 lbs fresh broccoli florets cleaned and separated ~2 large bunches
  • 3 green onions sliced, whites only
  • 4 garlic cloves minced
  • cup olive oil
  • ¼ cup Panko breadcrumbs
  • ¼ cup parmesan cheese
  • 1 tsp dry Italian seasoning
  • 1 tsp garlic salt
  • Black pepper
  • ½ tsp red pepper flakes

Instructions

  1. Spray baking sheet with non-stick spray. Preheat oven to 425 F.
  2. Separate broccoli into bite size pieces. Place in mixing bowl with onion and garlic.
  3. Pour olive oil over the broccoli. Toss gently to coat. Add in remaining ingredients. Mix well.
  4. Place on baking sheet in a single layer.
  5. Roast for 20-23 minutes or until crisp tender and crumbs are golden.
