I stole this recipe for Grilled Zucchini from marthastewart.com. This easy to make grill recipe is a great summer side dish. You can grill the zucchini while you are cooking something else on the grill. Zucchini is sliced lengthwise and marinated with olive oil, balsamic vinegar, oregano, salt and pepper. After marinating, the zucchini is placed on the grill to cook. Extra marinade is drizzled over the grilled zucchini. It’s always nice to have another grilling recipe, but the neighbors might want you to share.
Slice 4 medium zucchini (2 lbs) sliced lengthwise, ¼ inch thick. The original recipe called for half green zucchini and half yellow squash. Only the zucchini was on sale at my store, so I only used zucchini. (The recipe didn’t call for it, but I cut off the ends of the zucchini.)
Assemble the marinade by combining ¼ cup olive oil, ¼ cup balsamic vinegar, ½ tsp dried oregano, salt and pepper.
Then add the sliced zucchini to a large ziptop bag and pour the marinade into the bag. Next, let the zucchini marinate until ready to grill. (The original recipe had the zucchini being grilled as soon as the marinade was mixed in. I liked marinating the zucchini longer so there is more time for the zucchini to absorb the marinade.)
Heat grill to medium. Next, add the slices of zucchini, reserve the marinade. Don’t worry about saving the marinade, since there is no raw meat in the recipe, it is perfectly safe to use the marinade later.
Grill the zucchini, covered, turning once, until tender, 6 to 8 minutes.
Remove the zucchini from the grill. Then drizzle with marinade and serve.

- 4 medium zucchini 2 lbs sliced lengthwise, ¼ inch thick
- 4 medium yellow squash 2 lbs sliced lengthwise, ¼ inch thick
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- ½ tsp dried oregano
- Salt and pepper
